Bill and Judy recently went on a 5-week long trip to China! As always, they ate their way through Shanghai and Hong Kong. This is the first recipe we're sharing inspired by what they ate on their trip. It's a unique recipe for Spaghetti Squash—a "liangban" or cold appetizer that's a great side or starter as we head into the warmer months. It's seasoned simply with scallion oil, sesame oil, white pepper, and salt!

It's easy and delicious and we haven't been able to stop making it since we came up with this recipe!

Love this cool, refreshing approach to preparing spaghetti squash!

I love the idea of seasoning with the Szechuan peppercorns! Usually I just roast the squash and toss with lots of garlic oil but this sounds fresher and perfect for hot weather.

Many years ago, I worked with a Chinese woman who made the most delicious crunchy cold Spaghetti Squash salad that to this day I dream about. She said she was unable to give me the recipe because the dressing was a ‘home sauce’. So thank you from the bottom of my heart for this recipe. Steamed Spaghetti Squash in my IP is now the only way I make it and now I have the dressing too. I hope it’s on your website.

If you are worried about wasting food you can always use the scraps for a compost pile. The garden will love it next year. So you literally don't have to throw away any food.

Thank you so much Queen Judy, I love spaghetti squash, I will tray it. Two trick I do with squash, I cut it in half, remove the seeds with a ice cream scoop (the spoon type) and I cook it in the oven (brushed with oil and butter and seasoned) for more nutty flavor.
