I'm partial to fried corn in many dishes, so I'd fry that corn til it's basically crisp, and then add it to the salsa. Just my weird tastes.
I have everything to make this---chicken breast, though, since I seriously dislike thighs/dark meat---so I know what's for supper!

I would add canned chipotle. Cook rice in cilantro or corn is nice too
