Smoked Gouda changes the game entirely. Anyone who's never had it, please try it i use it in my cheese grits. I have yet to tell my wife why my grits taste that way😂
I also like to use a couple tablespoons of smoked bacon renderings for my Mac and cheese roux. The flavor boost is amazing

I used pre shredded cheese making this once, and my sauce basically turned into a giant ball of slime 😂
The cheese is coated in starch, which prevents a “wet” consistency forming.
Use fresh cheese if you want your food to be edible 😂

This is how my Jamaican grandmother made Mac and cheese. You don’t Need a roux if you get the good cheese and shred it yourself. Plus, I do not eat Mac and cheese if it’s not baked in the oven! Good job!!

The chicken base in the pasta water is something I’ve doing for YEARS! I no longer work in the restaurant business.. (COVID) but when I did that was exactly what I did with my pasta when making Mac and cheese, cheese sauce was made ahead of time, and I prefer to shred rather than using pre shred, but I was a sous chef and the exec placed the order for the supply, so I had no choice but I tried to use sliced and others on hand not pre shred, also I’d add mustard powder and yellow mustard to my cheese sauce, but the smoked Gouda was the star! Love this recipe I’ll give it a try!

Don’t skip on the smoked Gouda!! I tried this for Thanksgiving and it was a hit!! And that’s because we don’t play “trying new recipes” when it comes to traditional dinners and holidays! Can’t wait to make for Christmas.

You can use pre shredded cheese, just put it in a bowl and rinse it, then drain the water and dry it with a rag or paper towel
It will take the coating off of the cheese
