Choux pastry - eclairs - IBIS UC 60H planetary mixer - IBIS GT 1200 modular confectionery oven

Preparation of choux pastry in a planetary mixer UC60H with automatic lifting of the bowl. The standard planetary mixer is sold with a bowl and three working tools. In the video, the beater has a scraper cleaning the bowl and the dough is mixed with a spatula.
The choux pastry is baked in the IBIS GT 1200/4 modular electric oven. The oven is equipped with a GTOUCH touch control panel and a proofing chamber.
