What's the meat texture and color like.. Hoping not a lot of brown backstraps all through it like the other carp we catch sometimes.

definitely a mirror carp, i have had them to 20lb in my fishing In the UK, they do go to 50lb+, in France they go to100lb+

yes, mirror carp. I've never seen one but I've heard they are a European transplant.
