I have been growing figs for 30 years and have never seen or heard of anyone scoring roots on a root ball. Better to soak it in a bucket of rain water for 15 minutes. The results will be impressive. Rain water removes all the salt, and all the nutrients so you can start fresh.

Haven't you had any problems with dropping the fruit due to the nitrogen in the new soil plus scoring the root system?

May I make a constructive citicism? Those trees are going to have a bad time of it outside in any kind of wind because the trunks are so tall and thin. They look like they have been staked their entire lives and as a result the fibrous parts of the inner trunk have not been exposed to stresses of wind. The trees are used to being held up by the poles you have them tied to and the trunks are very weak. If you have any good arborists where you live, ithey will say the same thing. Just saying.
