You should try to CLOSE THE ROSE! You are leaving the stem open to the air. Try to close it all inside epoxy, not exposing ANY part of the rose to the air. Also, if there is a way to speed up the hardening process, try that too. I also heard of people closing the end of a flower stem with a hot pan or hot iron to close it so it looks fresh for a longer period of time. Maybe that helps with the discoloring

I put a fresh deep red flower in resin... It went semi transparent and yellow like your rose. Just an FYI to others

What happens is that during the curing process of the resin a chemical reaction takes place and it heats up, with the high temperature the water present inside the roses heats up and they "cook". It is not the case of rotting, because if the flower were to rot, both the dry and the fresh would have the same result.
