i'm a simple American guy. I hear british cooks talking, i listen. England may not have THE BEST reputation for its cuisine but its cooks are damn good and I imagine they are helping to redefine/refine what English food is all about.

Would have gone for béarnaise over hollandaise, but it likely conflicts with the horseradish. Hard choice. That fresh horseradish is gonna be hot hot hot.
