I would add the ginger last after the sugar has melted and reach 300 degree F and leave it to boil for 1 minute

Hi, I have a few questions that I want to ask you.
1. How long is the shelf life of these candies? Is there any way I can store it for longer? 2. I'm looking for a candy recipe that tastes great because I want to sell them. I haven't tried making these yet, but if I wanted to sell these, do I have permission from you? If not, I'll just make them at home for my family!
