Is it just me, but I wouldn't consider this a cheese at all, considering the amount of knowledge and how careful you have to be to not make any mistake? I thought you were going to 3 shot him with thorns or something.
This reminds how in ds3, when nameless king was giving me a very hard time, I looked up a cheese, and repeatedly attacking him with bows while running away came up. I tried it, but would always end up getting stuck on the invis walls, by which point nameless would be too near and start attacking. Once I actually stopped getting annoyed and learned him, he went down in 2 attempts, and the "cheese" unironically seemed much harder than fighting him legit.

It works on NG+7. In phase 2 if he doesn't die, wait for him to turn and be close to the mountain. Now repeat the same step - where you do Assassin's Gambit and Unseen form and go close to him - as you did in Phase 1. Throw any pot and it should trigger his death. All the best.
