HOMEMADE CRANBERRY SAUCE

TOOLS & EQUIPMENT I USE

Ingredients:
CORNBREAD (mix dry and wet ingredients separately)
2 cups of yellow cornmeal (fine)
2 cups of all purpose flour
2 teaspoons of baking powder
1/2 Tablespoon of salt
2 cups of milk
2 beaten eggs
1/2 cup vegetable oil
bake for 25-30 mins

STOCK (cook for 1HR to til meat is fork tender)
1 whole medium chicken or any chicken parts of choice (must be dark and white)
1 whole onion quartered
1 cut green bell pepper
2 carrots
4 celery stalks
2 bay leaves
3 thyme sprigs or 1 TBS of dried thyme
water to cover chicken

STOCK SEASONING
3 Tablespoons of chicken bouillon
1 Tablespoon of black pepper
1 Tablespoon of garlic powder
2 Tablespoons of onion powder
1 Tablespoon of paprika

DRESSING MIX
crumble cornbread
1 1/2 cup of Pepperidge Farm Herb Seasoned Classic Stuffing or plain
4 - 5 cups of stock
2 cans of cream of chicken
2 can of cream of celery
2 Tablespoons of poultry seasoning (add to your liking)
1-2 Tablespoons of ground sage (add to your liking)
1 cup of diced green bell pepper
1/2 cup of diced red bell pepper
1 cup of diced celery
1 cup of diced onions

GRAVY RECIPE
4 Tablespoons of butter
4 Tablespoons of flour
1 1/2 - 2 cups of chicken stock
black pepper (your liking amount)
Bake for 45 mins to 1 hour

Do you ever use cornstarch instead of flour making your gravy or sauces ? Sometimes its a little hard to get smooth or lumps out when using flour. My mom would always sautée her veggies and mix everything together and add more finely sliced onions and celery. She always said for a little bit of a crunch lol. I also love alot more sage than your recipe called for. But now this is the 4 recipe I am cooking this week. Lol Hugs from East Tn
