Glad I found your channel. My relatives came from the Abruzzi over 100 years ago. Our jobs as kids, although we didnt' have the board, was making the slight depression and rolling the gnocchi without making a whole through it. In our house, it was only ever red sauce. But gnoochi is so versatile, it can go into just about anything that calls for a little dumpling.

My 22YO son randomly decided to make potato gnocchi one day (he is not a high level cook at all). I stayed low key, not to give him the idea it was doomed. They turned out great!
He's never done them again. 😂

I had a problem for a long time where I wasn’t sure if I made good gnocchi or not. I’ve only had hand made a couple of times, and store bought definitely isn’t best. But how should they be? Am I making them gummy or stodgy?

According to some Italians I cooked for, I make incredible gnocchi. And risotto, for that matter. This is what following directions gets you!

In Poland we have the same thing called kopytka and it's also made from potatoes.
