You wouldn't think that lemons packed in salt for a few weeks would be anything to write home about. But preserved lemons are a North African treat and they are delicious! Preserved lemons give a real burst of freshness to salads, dressings and stews, and they go fantastically well with chicken and fish. Preserving lemons is incredibly easy.

I love the intensity of the flavour in preserved lemons, and like you say Keef, they are so good with chicken tagine.

These are a pantry staple in my kitchen. The last batch I made, I used Meyer lemons and they are stellar. Very nice video Keef!

i slice mine, thick, about half an inch or so, 6-8 mm, and discard the ends, easy to pop the seeds out, then layer them, salting heavily (kosher or sea salt) between the layers and press them down well, and top off with lemon juice.

Very nice and easy. I bought a jar of Moroccan preserved lemons once, they weren't quartered like yours but rather sliced in nice rounds and stacked. I think they may fit better in the jar as slices.
Would you consider making preserved walnuts in a video? I love those, and they're so hard to find here in the US. I've been thinking of making my own, but green walnuts are another hard to find ingredient, especially the Persian/English variety. To the point where I'm considering planting my own walnut trees (and yes I know it will take many years for them to produce nuts)

Going to try doing these as I saw some being packed in another video a few weeks ago and think these might be good to have on hand for using in recipes (the lad likes lemon cakes) and I like using lemon on fish too and roast beef I know that sounds weird but it works so well

today I made the recipe. I thought that 5 lemons wouldn't make it into the jar, but I was wrong. The juice from the lemons and the salt was nice. I'll wait now 2 weeks. I'm wondering how good it will become
