There's an easy way to tell of a Jack Fruit is ripe, either by it's color. Usually a ripe Jack fruit has like a brownish green color and when you press on the skin it's kind of soft.

Jack fruit can be eaten raw or ripe, usually vegans use jackfruit as a meat replacement, as I heard it taste like shredded pork when cooked correctly.
Or you can eat this fruit when it's ripe. This fruit taste like a mixture of mango and apple combined.
