If you wanna get technical: photons don’t have color at all. The frequency at which they wiggle makes your eyes detect color.

This is a simplistic explanation of light. When you combine red, green, and blue light, you get white light, and purple light is actually just combining the photons of blue and red light, much like mixing paint. They use RGB because those are the primary colors of light much like RYB are the primary colors of physical objects. You can create any color with them outside of shades.

Fun fact, the colors of light are additive, so the more you add different colors the closer you get to white, but the colors of physical substances are deductive, so the more colors you add the closer it gets to brown/black.😊
