Full recipe in detail:
2 cups sugar
1 cup butter
8 ounces ricotta cheese
2 teaspoons vanilla
2 large eggs
4 cups flour
2 teaspoons baking powder
1 teaspoon salt
For icing:
1 1/2 cups confectioners' sugar, sifted
3 tablespoons milk
2 teaspoons vanilla
Candy sprinkles
1. In bowl or electric mixer, mix sugar and butter at high setting until light and fluffy, about 5 minutes.
2. Add ricotta, vanilla and eggs. Set mixer to medium speed and combine until well mixed.
3. In small bowl, combine flour, baking powder and salt. Add to bowl of mixer and mix at low speed until consistency is doughy. Cover dough with plastic and refrigerate 1 hour.
4. Preheat oven to 350 degrees.
5. With floured hands, roll into balls about 1 1/2 inches in diameter. Place on parchment paper-covered cookie sheet 2 inches apart.
6. Bake at 350 degrees for about 15 minutes or until lightly brown on top. Cool cookies for 30 minutes.
7. For icing, mix together confectioners' sugar, milk and vanilla. Spread on cookies. Top with sprinkles. Makes about 4 dozen cookies.
