So, what really gives a jalapeño its heat?

This was a big f***ing debate in my jalapeño kitchen hack. Much of the heat from a pepper comes from the membrane (that white stuff) not the seeds themselves.

So, for all of you saying that taking out the seeds was getting rid of the spice, here you go.

Yes i agree .. i love when jalepwnos are mild you really get a taste of the wonderful pepper flavor .. i scoop thw seeds and the membrane out and roast them or steam them and they taste wonderful ..a little bit of kick but not sweaty hiccuping kick

That's because TAMs get interspersed that were developed to have no heat in the late 80s. Was a big resurgence in cooking with them.

I learned to choose the serrano chiles for that very reason.. They're pretty reliable. 🤗💥👍

Depends on how mature the peppers were when they were picked

When the jalapeño stem is curly
The pepper will be hot
If not, it’s mild

That’s partially true but not correct

Jalapeños in the 80s were grafted into two different types. Large jalapeños are a different variety than the smaller spicier jalapeños.
