You’re more right than you know. There’s a novel called “Certain Point of View” which gave most of the characters in “A New Hope” a short story. The bartender, Wuher, apparently lost his parents due to some battle droids.

It's a place where shady people hang out to make shady deals, and droids can not only see and hear better than living beings they can perfectly record and play back everything they see and hear as well.

Actually it is said that the bartender lost people to the droids in the clone wars

Originally there was a practical reason for the detector: druids don't drink and therefore just take up space that could be used by a drinking patron. Also it was Mos Eisley, the likelihood of a droid being used to listen in on conversations was high.

I always assumed the barkeep just didn't want to fill up space in his tavern with droids that don't drink.

It's a comedic line. In the theaters on release, most of the audience laughed out loud instantly at that line.

We don’t serve droids
Yeah well what’s a droid gonna order anyways

Or maybe it's just because droids don't drink anything anyway and would just waste seats where customers could sit. 😂

It's a fair point I also assumed that because it wasn't a huge place that they would be unnecessarily taking up space where customers could otherwise sit or stand. You also have the fact that people in the cantina like their privacy and even something like a protocol droid is basically a drone making digital logs of everything it sees and hears

Its a bar with shady characters, they want to be able to chat without every word being recorded.

I always understood this as "Bruh this is a bar, we serve alcohol. Droid don't drink so they'll be in the way and not pay shit."

It bothered me more that Luke and Obi-Wan would leave them outside unprotected knowing they were being looked for and especially what they were carrying.

I mean, if I was a bar owner I wouldn't want my bar getting cluttered up with non drinking non paying droids. Im trying to make these credits!!

Droids take up room and don't drink. Mystery solved🍷

I always thought that he didn't allow droids because of the space they would take up that an ACTUAL paying customer would use

When the film was made, there was ZERO idea that there was going to be a war with droids

Plus, droids can use sensors and cameras to record all they see to possibly use against the patrons of the bar. Hence " You will never find a more wretched hive off scum and villiany. " Wuher was just trying to protect his valued customers.

FUN FACT: In the book "Tales from the Mos Eisley Cantina", the bartender has his own story, ending right at the moment this scene happened. It explains this.

Nah, he just heard that the Empire was vehemently searching for some stolen droids and didn't want any trouble in his classy establishment.
