I have not seen ground lamb in the store before, that is a great-looking omelet. I no longer use high heat in my nonstick omelet pan; it lasts a long time.

Thank you for sharing this amazing recipe. Combination of meat and egg seems like a dream! Love the way you cooked it separately and then combined. That makes sure crispy texture and also meat being cooked instead of staying raw. Purple, maroon meat stands out on the white yellowish egg.
