There’s no need to line up the map to north. You can simply lay it down anyway you want. Then you put the compass on the map, line it up in direction of travel (same as in this video from 3:05). Then align the grid lines on the map with the lines inside the compass body, by turning the dial. This way, while transfering the bearing to the compass, there’s no need to use the needle. Now, take your compass off the map, stand up, hold the compass in front of you, and turn your whole body until ‘red is in the shed’. Now you know your direction of travel.

Just a slightly different way of taking a bearing, because you don’t always have a nice flat surface in the field to lay your map on. Also, it might shift when there’s lots of wind and you would need bricks to keep it steady. Sometimes the surface is uneven or slanting, and a non-global needle would ‘stick’ and not point north. On the other hand, pointing your whole map north might help you with orientation.

I think he missed a step. He just lined up his grid lines with magnetic north. He should have looked at the declinatination diagram and set his compass. There is an off set angle between magnetic north and grid north.
