GIANT Mexican Dream Fish! Catch Clean Cook- Roosterfish (Puerto Vallarta, Mexico)

Brook and I went down to Puerto Vallarta, Mexico and spent a week fishing with our friend Jamy from High Tides fishing. High tides offers an all inclusive fishing lodge, in addition to just fishing charters. Puerto Vallarta has some amazing fishing and we spent our time looking for rooster-fish, marlin, dorado and Cubera snapper!

That is one beautiful Mahi about 2/3's of the way through! If I had a boat, I'd be targeting Mahi almost everytime! They're such beautiful, tasty fish. I'm glad you had a productive trip, Vic.

Great as usual!! I was suprised to hear you hadn't worked with beets!! Beets with Kalamata Olives, feta/goat cheese over field greens dressed with a very light vinaigrette is super refreshing summertime dish
