You guys set the standard for high-quality meats and for being super clean. When I can, I will make a trip there to get my meat. You have set a high bar that not many shops are known for.

One of the jobs I had at our local grocery store butcher shop was to hose down the meat cutting room. We did this by spraying everything down with a hose, into a floor drain. The butchers were real douchebags and would throw ground beef and scraps of fat on the walls and all over the equipment. One time I didn’t bother to clean it and they were pissed when they got in the next morning. I told the store manager, “now they know how I feel when they purposely throw burger and meat scraps all over”. 😂 we all got chewed out but no one was fired and the BS stopped.😊

Now that I'm just cutting at home for us, I work in the kitchen with a commercial meat slicer being my only "luxury" so, I start clean as do you then at clean up it's pretty much the same, get any loose materials up, then hit the sink with a bleach-mix cleaner and wipe heavy spots on the counters but, to finish the counters and the slicer (after main disassembly/cleaning) I spray everything down with "food surface sanitizer" which is a safe, pink fluid that's available by the gallon at Home Depot. It's a great product that you also let sit for a while then can let air dry (best) or wipe down after 30+ minutes and you're good. I use it on anything that doesn't go in the dishwasher. Counters, sink, knives, anything that got used/exposed.

i worked as butchery server/cleanup as an after high school job when i was a teenager, i would serve the counter until closing, then i would do dishes/trays then i would pull the mincer auger out and open the bandsaw doors and remove as much bone pulp by hand then i would use the foam sprayer to spray the entire shop from walls to floor and all machines, i think it was those chemicals you mentioned then i would use the hot water hose to hose everything into the sump drain.. it was a woolsworth butchery so i wore the standard uniform plus a full butchers apron ... man i went home smelling like cut bone and that cleaner

One of my favorite parts of working at a restaurant/food place to be honest. Cleaning just gives me therapy, but I’ve only worked at one restaurant and I was the dish washer like 6-7 years ago (feels like yesterday) but when I first got there they weren’t really that sanitary in some areas.. so I really made sure to keep everything as clean and sanitary as possible, because I just find it ignorant if you’re gonna work in that business and not give a fuck about having a clean environment and giving safe/clean food to people, so many people should NOT be working at those places…

White vinegar and a pressure washer with a 1or 2 gallon water tank attachment seems to work too, if you don't mind the smell of vinegar lingering in the air for a few hours.

I worked at a creamery one summer. We worked 8:30am to 5pm. At around 3pm, we would wrap up production, and start the cleaning process. Every single day we would clean for 2+ hours until the production and packaging rooms were spotless.

My first job ever was as a butchers boy after school. Yelling "Walking" to the double line them moving steadily to the change room, trusting the butchers flashing knives would stop for the second became normal as I passed. Remember the speed of koru (elder) breaking down chicken's. Their day ends, and mine began. Cleaning dixies, trays hooks, etc, while they finished. Then the line, drains, traps, saws, grinder etc. That hose was burn you hot. But it is the smell of the bleach that came roaring back watching this. Taught me about being present at work, trusting the guys and that my job was as important as anyone's even though I was low man. The butcher would stayed on to help customers, taught me that. 40 years later, I am thankful for those lessons.

Brings back memories of starting out as a meat clerk. I remember being proud of my first night cleaning the shop solo only to get ripped by the meat manager and the journeymen for the crap job I really did. 😂😂 It was rough but man it taught me to be thorough and double check my closings. Good times.

The past butcher here in the town I live in, to keep costs down for locals, always had the customers help. From my own experiences, the clean-up is as much h work as the butchering.
