Love Japanese knives and have used them most of my adult life. The balance is better than with thicker, heavier knives, and they stay sharp a long time if you take care of them.

Japanese knives have a higher hardness than German knives. That means they stay sharp for a longer time and you don't need to sharpen them so often. However that has the downside that they chip easier.

German knives have a lower hardness which makes them dull quicker, so they have to be sharpened more often. But it also makes them more resistant to chipping or breaking.

That aside the Japanese knives do look better imo. German knives are very practical but not so stunning in the looks department.

In my country Japan is also called Yapan. But in a conversation in English you would still call it Japan...
