These JIGGLY JUICE BALLS are an irresistible popping treat!

✨Recipe inspired by @Reyna.Edmonds:
Ingredients:
• 1 cup fruit juice of choice
• 1 tbsp calcium lactate
• 4 cups (1 quart) water
• 2 tsp sodium alginate

Directions:
1. In a large bowl, blend the sodium alginate into the water until fully dissolved. Let the mixture rest for at least an hour (or up to 24) to allow air bubbles to disappear.
2. In a separate bowl, blend the fruit juice and calcium lactate together. Pour the mixture into ice cube trays and freeze for at least 4 hours, or until solid.
3. Warm the alginate bath to about 120°F (49°C). Carefully drop a few frozen juice cubes into the bath. As they begin to melt, they’ll form a jiggly membrane around the outside.
4. Once the pods are fully formed and slightly soft, gently remove and transfer them into a bowl of cold water to rinse.
5. Serve immediately and enjoy your wobbly, sippable creations!

This reminds me a bit of the hydration drops used to keep people with dementia hydrated. The company is Jelly Drops I think! Very useful and helpful

Putting the sodium algernate in the water makes it more stable (especially if you use the calcium lactate in the finished product). You can freeze and thaw it without it turning into a pile of goo, and you can boba-fy milk based things like yogurt and cream. I've seen cheese boards make balsamic vinegar "caviar", and soy sauce pearls for less messy rice balls/temaki rolls. Experiment! Have fun! Always play with your food!
