Today, we're turning up the heat on our Pit Boss Sportsman Series 7 vertical smoker and putting its capabilities to the test. Our mission? To smoke a whopping 10 juicy chicken thighs to perfection. With the right techniques and a little patience, we'll transform these humble chicken thighs into smoky, flavorful masterpieces.

Ingredients:

8 chicken thighs
Kinders barbecue rub
Heath Riles garlic jalapeno rub
Thermoworks RFX wireless meat probe

Instructions:

Preheat smoker to 250°F.
Arrange chicken thighs on a tray, skin side down.
Season chicken thighs with barbecue rub and garlic jalapeno rub.
Insert meat probe into the thickest part of one of the chicken thighs.
Place chicken thighs on smoker racks, spaced out evenly.
Close smoker door and cook until internal temperature reaches 165°F.
Remove chicken thighs from smoker and let rest for 10 minutes before serving.

Tips:

For crispier skin, cook chicken thighs skin side up for the last 30 minutes of cooking.
Experiment with different rubs and seasonings to find your favorite flavor combination.
Serve chicken thighs with your favorite sides, such as coleslaw, potato salad, or baked beans.
