As a fan of both thanos and the hulk I can surely tell you that the Mad Titan knew the hulk was coming, Thanos has a wide array of mental powers and had the gem in hand hulk cannot mask himself . even the dialogue at the start of the fight showed thanos trying to avoid the fight.
