Hi Nancy, I have been doing this cheese for quite some time because I absolutely love it. I bought my cheese molds through Amazon, they are much better than the mold you use (which I used before as well) because they are like baskets which makes it easier to pour the liquid out. I just lift the mold and pour the water left in the bowl. These molds that I bought come in a set with different sizes. I love it. Check it out, beijinhos

I might have put too much rennet (1 tablet for a gallon of milk). The milk immediately curled. It was an incredible small yield, like yours except I used double the milk.

Also, isn't the liquid that stays behind whey? If so, it should not be thrown out as one can make a ricotta cheese out of it.
