i like to imaging that grievous needed fear, surprise, and intimidation to win against a battle. and since he had none of those and obi wan surprised HIM, he did his best to at least put a little fear into him by talking big and using four lightsabers.

Just seeing the original Grevious still gives me chills... and having him square off against Kenobi... makes me scared for Kenobi (which is how it should've been in the movie, but wasn't).
