Spanish Almond Cake Tarta de Santiago/ Flourless/Gluten-Free

This Almond cake is full of flavor. It is also very moist and contain no flour, so will be perfect for people that are on a gluten-free diet.
I am using the Almond meal, but you can use Almond flour or simply just crushed Almonds.
TARTA DE SANTIAGO
Ingredients:
3 eggs(at room temperature)
1½ cup Almond meal
¾ cup sugar
zest from 1 orange
zest from 1 lemon
½ tsp cinnamon powder
½ tsp salt
1 tsp Cointreau
Method:
Separate eggs.
Beat the egg whites with sugar until soft peaks.
Add the yolks and beat until pale yellow in color.
Add orange and lemon zests(I used just a half a teaspoon of Cointreau, in each to enhance the flavor)
Add Almond meal , combined with salt and cinnamon.
Mix carefully so the egg mixture does not fall.
Transfer batter into 7 inch spring form, buttered and coated with almond meal.
Bake at 365°F(185°C) for 30 minutes.
Take out of the oven and let cool.
Remove from the spring form.
Dust with icing sugar.
Enjoy!
