Here's my recipe for amazing 100% whole grain sourdough bread made with SPELT flour. Spelt, an ancient-grain relative of wheat, has apparently been cultivated since the Bronze Age. You might have come across it in a health food store as it's known for producing soft and airy whole grain bread. If you've already made my 100% whole wheat sourdough bread (link below) and you're trying to incorporate a variety of whole grains into your sourdough bread baking, try giving this "Spelt Sourdough Bread" a shot too! I recently started getting interested in whole grain ancient flours to make sourdough. I tried this and it turned out wonderfully! Moreover, I topped it off with an egg wash along with flaxseeds and pumpkin seeds. I appreciate this recipe. Thank you for doing the experimenting for us and taking the guess work out!

Thank you soooo much for this recipe. I’ve watched your video countless of times as I bake the recipe. I found your new version, the simple straight forward video. It’s the same recipe, right? I haven’t found a difference. I like how I was able to print the recipe in the other video. Both videos are very helpful. Thanks to you I learned how to bake a Spelt sourdough bread my family loves. Thank you for your video! Never knew I used too much hydration for spelt. As someone who is allergic to wheat, spelt sourdough is my only option. I'm trying your recipe right now. Fingers crossed! 🤞

I always thought higher hydration meant softer bread but you made this doe soft and its dense in the formula

Just made this and it’s fantastic! Mine seemed a lot wetter than yours when I started but I’m glad I didn’t add any extra flour as it turned out great by the end of the rise. I didn’t have a pot to cook it in so I just baked it for longer on an open tray with a tray of ice underneath at a lower temperature. Not sure if it might have turned out even better if I’d cooked it quickly on 500 like you do…? Maybe I’ll try that next time… Either way, definitely the best 100% wholemeal loaf I’ve ever baked baked by far!
