If you're looking for the perfect summer food, then look no further than this vegan watermelon & feta salad! It's super quick and easy to prepare, and packed full of vibrant flavours and colours. Even if the weather outside is miserable, you'll have a bowl of sunshine to cheer you up!
The watermelon gives a lovely floral sweetness that pairs so well with the salty creaminess from the vegan feta, and the tangy crunch of the cherry tomatoes. Fresh mint, coriander and chili, along with a squeeze of lime juice and a drizzle of walnut oil, really enhance the ingredients, making everything sing together harmoniously.

2kg (4.4lb) Watermelon
250g (8.8oz) Cherry Tomatoes
1 Large Cucumber (deseeded)
230g (8.11oz) Vegan Feta Cheese
1 tsp Fresh Mint (finely sliced)
15g (¼ cup) Fresh Coriander (chopped)
½ tsp Black Pepper
1 tbl Walnut Oil
Pinch of Salt
Juice of 1 Lime
¼ tsp Chili Flakes
