Mudcrabs are easy wdym? They die in 1 hit, 2 max and they barely do any damage.
But here's my list of hated enimies in games
God of war 2018 revenents and nightmares
Uncharted series the shield guys or heavy machine gun guys (honourable mention the ghost hallucination thingys in uncharted 3, they're so op).
Ac origins, archers are easily the most annoying.
Ac 4 panthers, you miss you lose half your health.
Ac Ezio trilogy I'd say spear guys cos you can't counter kill them easily
Skyrims one would either be ancient dragons (the yellow ones which are like 3 times as strong) or draugr deathlords especially in early game.
