I have so much admiration for Italians and their amazing cooking abilities. A few years back, I was at the store looking for pasta sauce, and this older Italian lady approached me and inquired if I needed sauce for my pasta. I said yes, and she seemed shocked and offended. She then took me to the fresh produce section, picked out the ingredients, and gave me the best sauce recipe I've ever had. I'll never buy premade sauce again - out of respect and a little bit of fear!

Stuff that's useful to know if you plan on trying this.

1:57 You really can't use pre-grated, it's not Matteo being a snob. The reason you can't use pre--grated cheese is that grated cheese you buy in a bag is dusted with starch to stop it clumping together. If you try and make carbonara out of it the starch in the pasta and the starch in the cheese will make your sauce extremely starchy and you wont end up with a sauce, you'll end up with wallpaper paste.

4:35 The reason you hit them on a flat surface is that it's much more likely to keep the shell membrane intact and all the shell is stuck to that. That means when you split the egg the shell should more reliably stay attached to the membrane so you're less likely to get that little chip of eggshell you need to fish out that you often get if you whack it with a knife or on an edge.

6:12 I've heard multiple Italian chefs say you should treat the pepper in carbonara like an ingredient not a seasoning. You can add a lot to the flavour by using whole pepper corns and toasting them in a dry pan before you grind them (toss them in a hot pan until you can smell them). And then be liberal when adding it. This is a particularly good way to prop up your carbonara if you just can't get guanciale and are having to resort to pancetta or bacon. It can add back in some of that complexity you lost from not having that fat to render down into the sauce.

16:08 You need to wait for this oil to cool. If it's above 80c/175f it'll scramble the eggs and give you a weird lumpy sauce.

29:28 Matteo just knows what he's doing here because he's done it so many times he's used to the pace of it. Which is how chefs cook it. He just feels it...but the actual goal here, so you know, is to let your pasta cool from cooking just slightly because your eggs need to be brought up to a quite specific temperature. You need to get them to 70c/160f to cook them, but if they go above 80c/175f they scramble. The residual heat of the pasta is all that is cooking your eggs here and you need to get them really specifically to around 75c so this can be challenging, it's about timing. Don't let the pasta cool enough and the sauce will curdle, let it sit too long and you wont cook the eggs. Same thing with the pasta water you are adding. It needs to be down to the minute.

An alternative way to do this is to bring your sauce up to temperature in a bain marie over the pasta water and use a thermometer, then let your pasta cool enough so it definitely wont overcook your eggs. Luciano Monosilio has guides on Youtube for this method, it can be a lot easier for people who don't know Italian cooking because you just heat it to the exact temperature it needs to be. Otherwise you just need to "feel" it the way Matteo does here.
