Pellet Grill | Smoking a Brisket UNWRAPPED | Pit Boss

Today we will be smoking a full 15lb Packer Brisket without wrapping it at all.
A very popular method for smoking brisket is to wrap it when the meat begins to stall.
Instead of Wrapping and Mopping, I am going to smoke it UNWRAPPED on my Pit Boss 820D Pellet Grill.
In this video, we go over trimming, seasoning, and smoking!
Unfortunately I did have to work today, so a special thank you to my wife for helping keep things moist and tender!

So many other videos say, "Don't use olive oil as a binder".... or, "Don't used iodized salt". I say, If it works for you and you like the taste, do what you like...do what you want....experiment and don't be afraid to fail!

Great video on brisket without the Texas crutch wrapping. Took longer but better bark and was not dried out. Nice job.

I must admit when you cut into that brisket while still in the smoker I completely lost my shit. I was like What are you doing?! All the juices are going to run out! But it still looked really juicy great bark. 👍 Awesome job my friend

Good video. New subscriber. I run a fishing channel, but just got a Pit Boss and am looking for the best ways to cook. Love the apron. I spent 25 years in the army and my apron says Grill Sergeant. Ha Ha. Looking forward to more videos.

Why did we cut into it before we let it rest. Couldn’t we just put foil under the areas that was done so we don’t lose all those juices? Plus the rest would let it cook longer if you wrap it then. Am I wrong?

35 years never had to wrap a brisket, stick smoking 15 hrs👌 pellet 6 hrs👌, but short on smoke like I did with stick

wouldnt it have been a better idea to separate the point and the flat from the beginning rather than doing it at the end?

Im going to have to break down and get a pellet smoker I always considered it cheating but who cares you don't have to baby sit it all day like a stick burner.
