Not sure if you've done this yet but animals you find dead or kill will decompose the longer your near them. When you kill them they will be fresh, if you set up a camp near it and sleep, when you return it will now be 'rotten', repeat the cycle again and it'll be even more rotted, repeat again and all that will be there is skeletal remains. If you then do this process one more time, the skeletal remains will look like they've been trampled over and destroyed. Afterwards, they will disappear.
