Rhubarb is a really useful ingredient, they grow and are ready to harvest just before the summer berries. I make rhubarb syrup every year but this year I just had to make candy out of the residue, the part I usually just throw away. It turned out really, really great, it reminding me of the tamarind candy my mom used to make me when I was young. It’s chewy, sweet and tangy … very delicious.
