TLDR: for raids, IVs do matter if you want to do more damage + last longer in battles.

I'm pretty picky with shadows. My minimum criteria is typically at least 3* with 15 attack although I do have some that I use with slightly worse attack.

To summarise: 0 IV shadow is better than 100% normal. Attack IV is most important but hp/def makes a difference too, so its up to you how picky you can be.
Brandon keeps shadows above 80% IV, you dont have to.
