I felt this so hard. When I began my health journey, (and it really was a health journey as I was recovering from health issues related to food), I very much had the “but healthy food isn’t satisfying” mindset.

Low and behold, the reason why I was thinking this was because I was trying to make “healthy food” the only food I ate. What I quickly found was that I was left unsatisfied and hungry after a meal very often because I would mentally restrict myself from other foods. This created a scarcity mindset.

I changed how I approached healthy food, at least for a while, that it was supplementary and not 100% of my diet. Oh my god, just that simple mental change was everything. I realized that I liked eating fruits, veggies, beans, and whole grains *alongside* my meal. I realized I liked the taste of veggies when I could doctor them up with some dressings and toppings. Eating became fun again, but more importantly, it became *much* more satisfying. I am much happier each day because my body trusts that I will give it not only a nourishing meal, but a satisfying one. Additionally, my anxiety levels have dropped substantially. I have energy to actually do things now, both mentally and physically. Some days I feel like crying because I actually feel good being alive for the first time in years.

For the salad:

8-10 cups kale, chopped into small pieces with stems removed
2-3 cups shaved Brussels sprouts
15oz / 1.5 cups chickpeas/garbanzo beans, washed and dried
1 medium sweet potato, thinly sliced
3/4 cup sunflower seeds, salted

1️⃣Toss the Brussels sprouts, chickpeas, and sweet potatoes in olive oil, salt, and pepper (garlic powder optional) and then roast in oven at 410°F (210°C) for 20-25 minutes, flipping halfway through.
2️⃣Meanwhile, splash the kale with olive oil and about 1tbsp of apple cider vinegar (or lemon) and massage for 2-3 minutes.
3️⃣Add roasted ingredients on top of bed of kale and then sprinkle sunflower seeds on top.

For the dressing:

1/4 cup olive oil
1/4 cup tahini
2-3tbsp lemon juice or apple cider vinegar
2-3tsp dijon mustard
2-3 tsp maple syrup or honey
salt and pepper to waste

1️⃣Combine ingredients together in a bowl and whisk together.

That’s very true. We tend to eat bland food when we’re “dieting.” And automatically subconsciously relate healthy food to food that is less delicious. But truthfully, nutritious food can be delicious when prepared properly. Also, it can be mixed up with less nutritious foods to create balance, so.. a win win. 🤷🏼‍♀️

My rule with eating out is that I will gravitate towards things I can't make at home. I hate deep fat frying at home because of the smell and mess, so save that for eating out. But I love salads and vegetables at home :D

Ngl though some cuisines are just more healthy/ make more sense. I’m Chinese so I realized that all I had to do was have portion control, and consistently eat my childhood meals of rice/ noodles + veggies + protein (meats or tofu). Tasty, balanced, and healthy too yet simple, it’s much easier than coming up with western recipes at least for me

Idk sis I definitely try gourmet healthy dishes but it never beats the gourmet indulgent dishes from the same place. But for some people who simply dislike carbs or fatty foods, they would probably strongly disagree with me. I think some people just DO have a palate that prefers foods which are not traditionally considered “healthy”. I’m honestly a little tired of the narrative in “healthy” communities rn which is simply that “it’s not that you hate vegetables, you just don’t know how to cook them!” Or “it’s not the chips you want, it’s the salty seasoning!”.

Maybe for some people this could be true but for some of us as long the item that we prefer by far exists and is available, it’s really gonna be hard to use this mindset to improve diet.

Use herbs. Try a lot of herbs that you like, even try combinations and use that for marinade, add to sauces and so much more.

I used to think a salad was throwing some veggies together and eating it raw. Of course I never wanted to eat salad, or only ate a little of my veggies and then filled up on meat and carbs. But yeah, then I learned about actually using stuff like spices and different oils and sauces and different ways to prepare said vegetables. Now I love em. Sweet potato? Yes please! Bell pepper? Could eat that every day. And I make a mean stew with Brussels sprouts 🤤

I LOVED vegetables growing up, my mother made so many diff dishes that tasted so good that I would gladly eat veggies for weeks. ig she made it fun and creative 🫶

i like to make a really flavourful main dish so things like steamed vegetables taste give a break for my tastebuds! it's also a great way to finish the meal :)

My way of making veggies taste amazing; onion and garlic. I used them with literally every single veggie and OMG garlic makes anything taste good.

I thankfully come from a place where our cuisine uses veggies and it doesn’t taste bland, because we use seasonings, so I adjusted well when I finally made the decision to eat healthier.

For me I often find roasted vegetables to be quite sweet, moreso brussel sprouts and broccoli. My sister always looks at me a bit insane when I say it though. Roasted vegetables can be a great place to start, and as I've always had trouble with textures, I typically purée sauces and such, which could also be helpful.

yeah the key is seasoning. When i seasoned a chicken breast before frying i was surprised by how much of a difference it made

To some people it will never taste good no matter what we do. To us, this narrative that veggies can & should taste good is actually harmful because when we NEVER taste good veggies we think everyone is lying or something is just wrong with us etc. I had to stop lying to myself and focus on how eating the food makes my body feel, not my tastebuds. There is not a single veggie I enjoy in any format, and I’ve tried all different cuisines Chinese Korean Ethiopian Japanese Indian Mexican Thai etc etc and I don’t like any of them, I’ve had to be honest with myself and say that I need to focus on health regardless of what my tastebuds say. When I research the positive health benefits of veggies it helps me to be able to eat them.

I like all vegetables! I love kale, but not raw. I've try it, but did not like the texture or taste. It has to be cooked 😊

also if you plump up raisins in white wine vinegar and honey on the stove, it's AMAZING with kale salad
