CREAMY RICH VEGAN ALFREDO SAUCE | EASY RECIPE

Creamy and rich vegan Alfredo sauce that is delicious and so decadent! This Alfredo sauce recipe is legit! You won't miss any of the butter or dairy in this healthy and lightened up version. I love that I can still enjoy a rich and creamy Alfredo sauce, but stick to a whole food and plant based vegan menu!
INGREDIENTS:
1 onion, chopped
1/2 cup vegetable broth for sautéing
4 cloves garlic, minced
1 cup raw cashews, soaked overnight
1 cup water
1 tbsp lemon juice
1/2 tbsp white miso paste
1/2 tsp sea salt
1/2 tsp black pepper
1/8 cup nutritional yeast, plus more for topping
1/4 cup chopped parsley
1 pound of favorite pasta
1. Sauté the onions in vegetable broth until tender, and then add the chopped garlic. Sauté until tender and the broth is absorbed.
2. Cook pasta according to package directions, make sure to salt the water to season the pasta.
3. Add the cashews, cooked onion and garlic, water, miso paste, lemon, salt and pepper, nutritional yeast to the blender and blend for several minutes. Until creamy and smooth. Adjust any seasoning and if necessary add a bit more water or broth to reach desired consistency.
4. Serve over pasta and garnish with parsley, black pepper, and nutritional yeast. I also love to top with cut up red and green pepper too.
