RECIPES:
Breakfast:
- 1 banana blended
- 1 cup berries, blended
- 3 slices of toast
- 2 tbsp maple syrup
- extras could be seeds, choc chips, other fruit etc.
Lunch:
Makes 8-10
- 1 tbsp olive oil
- 1 red pepper chopped
- 1 onion, chopped
- 1 small garlic clove, crushed
- 325g tin sweetcorn, drained
- 1 cup any flour
- ½ tsp smoked paprika
- 2 eggs
Fry the onion, pepper and garlic for 5 mins until brown. Then add that in to the remaining ingredients and combine. Place on a stick proof baking dish for 10-15mins until cooked throughout.
Serve with any salad you like and poached eggs (:
Dinner:
- 500g 5% fat minced meat
- 1 tbsp mustard
- 2 slices bread, toasted and blended to make breadcrumbs
- 2 tins chopped tomatoes
- 2 onions, chopped
- 3 garlic cloves, crushed
- 2 tbsp tomato puree
- 1 tbsp sugar/or sweet replacement
- 1 carrot (finely grated)
- Tbsp soy sauce
- 1 stock cube
- 200g linguine
In a large mixing bowl, mix the breadcrumbs, minced meat, 1 chopped onion, 1 crushed garlic clove, 1 tbsp mustard and 1 tbsp tomato puree. Roll the mix into small balls (the size of pin-pong balls). Heat a large non-stick pan and add the onion, garlic and carrot and brown them for 5 minutes. Then add the sugar and soy sauce, mix and push to the side of the pan. Place the meatballs in the pan and keeping turning them until they’ve browned for 5 minutes. Then add the chopped tomatoes, stock cube, remaining tomato puree and extra water if too thick. Place a lid on the pan and simmer for 30minutes. Remove the lid and simmer for a further 10minutes or until the meatballs have cooked. Cook the pasta and serve together (: xx
