I've got to confess, I love this stuff. So will you. I can't tell you how to make the Original Recipe KFC, but the Extra Crispy is easy to do with stuff you have at home. if you're wondering about the Batter Pro, I've seen them at Amazon, Cabela's and Grocery Outlet.

I learned a lot from this video. I learned about milk and darkening, using tongs, pressure frying, brining, high temperature for crisping the skin. All great stuff for someone new to making fried chicken. Thanks!

This vid and you have motivated me to get out and unpack my new old deep fryer purchased from Emeril and never even opened it. I have always loved KFC and have watched every vid on YouTube about frying chicken. You are fabulous!

The wash and the brine are two different steps. The salt and water brine is an hour or so or even overnight. The weak milk wash is just a momentary dip. I use vegetable or soybean oil but KFC uses Shortening or Crisco.

No, the wash is regular milk. You could use buttermilk but that will change the pH and likely cause the chicken to get too brown.

Many people like to marinate in buttermilk as it they claim it tenderizes (debatable) and enhances the flavor. But you must wash or shake it all off before breading or the chicken will burn.

If you like it more highly seasoned, add more salt/seasoning to the brine, or brine it longer, or you could add some seasoning to the flour, although that isn't how KFC did it initially for the Extra Crispy (although these days they may). They do have the famous secret seasoning mix for the Original in the flour, as you probably know. I usually only do a single flour dip for a lighter breading as I like it a little less crunchy as well, so you could try that.

I think triple dipping might be overkill. As it is, the double is pretty thick. To be honest, I usually only single dip for myself.

Many stores like Walmart or Walgreen's or Grocery Outlet have "As Seen On TV" sections and that's where I think I found my Batter Pro. But I bet it is still available online if you Google it.

As we mention in the video, it's called the Batter Pro, and it's available via Mail Order, on the web, and in many stores all over the States, or at least it used to be. I'm sure a Google search will turn up many sources for it.

It's how we did it and in my opinion it is necessary. But you could use a stronger brine and do it for an hour or two.

It's the latter. Put them in at 375 and let them cook at 335 for 12 min. Sorry I wasn't clearer.

Our dip was not a slurry, but a thin milk wash, and it did not have egg in it. For the Original Recipe the wash did have egg, but was still thin with no flour so not a slurry either.

I noticed from a behind the scenes KFC video, the spicy comes in sealed up with the species on it like you would sometime see in your grocery store. And I think in modern stores they do all 3 types this way. I think dry milk is added to the flour, so they're dipping in plain water. One time for original twice like this for the spicy and crispy. Definitely have to try diluting my milk or butter milk

Bought the Batter Pro on Amazon and love it! However, I have an electric skillet, so it takes much longer to fry. I'm making it now, and the thermometer is finally reading 165 after nearly 40 minutes. Ad I've been flipping it over every 6 minutes. It looks wonderful though!!

Your version seems to be the closest to KFC, agree with you. I have Looked at a lot of other videos on YouTube and yours just seem right .Thank you for posting!
