Spring rolls are great for a party, whether you're having them in at home or bringing them to a party at someone else's house, but you want to make sure that you store them properly so that they don't dry out before you serve them. I wet a clean dish towel in warm water and I drain all the excess water. The towel lays over the spring rolls and it keeps them humid and moist to ensure that they're not drying out. Whatever you do, don't put your spring rolls in the refrigerator. It causes the water in the rice paper to evaporate and become hard.

The best way to keep spring rolls fresh is to individually wrap them in plastic wrap. They stay fresh ( soft and moist) up to 1 or 2 days even in the refrigerator. This is how my mom does it. Mommy's technique.

Can i make them at 6am in the morning and than till 7pm...do i have to resoak the towel? or do i just lay the down on top of them?
if i wanted to warp it tightly can i put glad warp on top of the wet cloth

Dang im going to give this a go make them up in the morning ill glad wrap them individually put them in fridge hopefully they good to go by dinner time fingers cross they not all stuck together on glad wrap

@dddallypal Yes, make sure you tightly wrapped them. It's ok to leave them outside if it's less than a day. Refrigerated it if exceed 24 hrs. I recommend you to do some trials before actually do some for your class. My mom makes them all the time so my sister could eat them after school or the next morning.

You can store them in the fridge. Just moist paper towel on top and air tight container. Plus not all wraps are created equally.

@YuDumPhuck so if i was to make them around 4:00PM one day then serve them by say 11:30AM the next day would they still be fresh? cause I am making 25 of them for my class

Thanks for the tip i was just about to ask how to keep them fresh if you want to take some to a party or something like that. Thanks, how long ahead can i make them if i am going to take them to a gathering?

Hi... appreciate your reply. I have made vietnamese spring rolls a few times now. What frustrates me the most is that, when I wanna pack them in a plastic container when I'm done wrapping them, they stick to each other and when I pull them out, the skin is torn. I wrapped them nicely and all. It frustrates me the most. I love the rolls but I can't take them away from my kitchen. That sucks. Please help me out. Thanks.

The part when you said dont leave it in refrigerator because the water will evaporate. Thats what i want to hear haha because i have some rolled ones now im planning to fry them and it keeps on ripping apart

The language thing is probably regional.  Where I am, theses are salad rolls and the the fried rolls are call spring rolls.

Put them in a good tight ziplock bag! They won’t dry out and freezing works perfectly fine :)
