Personally I prefer the anime's ending to the Miraschon fight. In the manga Jolyne kinda just brute forced her way to a victory by beating up Miraschon until she was unconscious, whereas in the anime it was changed to her outsmarting Miraschon and using Miraschon's own tactic of bending the gamble's rules against her. To me a clever victory feels much more satisfying

I have to be honest, when Jolyne's handcuff disappeared during the Visitor arc I thought Jotaro just flexed using Star Platinum: The World and didn't say anything.

Small correction:
Gwess telling jolyne she can sleep in the lower bunk is not removed, it's moved to the end of their fight, when jolyne is about to beat goo goo dolls to a pulp.

I didn't realise they removed so much, but honestly except for a few of them I think it had a good influence on the part, it's much more fast paced now and the newly added scenes help stich together the arcs. Animaton wise it's great but I don't think it reaches part 5 level animaton. It's probs due to covid but in some scenes the faces look a bit off and noticable Cgi scenes are kinda offputing at some points, but I still think it's a great adaption and I like the approach Dp has taken.

A minor change, but I am GLAD Star Platinum looked more like his usual self, than in the Manga where SP is so thin and Jotaro also looked less stiff. Both Jotaro and SP looked superior to their manga counterparts

People don't realize how big the difference of Hermes not meeting Anasui will be. If we follow the manga, Anasui and Hermes will meet at the end of the Heavy Weather arc for the first time!
(You can argue Hermes and Weather meet while they're both injured, Weather from the Lang Rangler fight, Hermes from Sports Maxxx)

This was the first time I read the jojo manga before watching the anime and honestly, I missed alot of the "flavor scenes" which they removed. Those scenes in the manga helped create the more oppressive, corrupt shithole setting of GD St. Prison and a bunch of them ironically also helped lighten the mood. I can see why people prefer this but I personally liked the pace of SO so :P. Here's to hope they don't trim any content from the actual fights in the punishment ward especially from Guard Westwood, that shit would be amazing to see animated.

There’s actually a big difference that you missed Hamok Beat. In the manga, in the visitor’s arc, when the blonde guard tries to hit Jolyne, Jotaro stops time just after a bullet hits his arm. Then the manga shows how Manhattan Transfer works by showing the trayectory the bullet made, and then time resumes again and the bullet kills the guard. In the anime this is skipped and Jotaro and the guard are just shot normally.

While I do think the anime did some good calls in regards to tightening up some aspects of the story and making things more coherent for some to understand what's going on, I can't help but think of all the little world building elements that got cut out in the process. Part of why I love Stone Ocean so much is because it's when Araki got really good at writing minor characters that help reinforce events going on in the story that aren't explicitly about the main characters or the problems their facing. Like the barber who sets a good example of how important money is to the daily lives of prisoners and prison staff. I hope they'll start to add in more small moments later on as some arcs like how "Made in Heaven" is affecting everyone around the world is what makes part 6 unique from other adventures.

Another important difference is the manga shows how Jolyne sneaks her threads through the gate before punching Gwess. In the anime, she just magically punches her (and we can infer how she did it), but the manga actually shows how she got her stand through the gate to deliver the punch

A tiny one, but similar to Anasui: in the manga Jolyne's lawyer's ears get longer with each new panel he's in. In the anime he's an elf right from the start
English Dub: F-Bombs have now been added to the arsenal.

Noticed a mistake. The monologue with Pucci isn't really new, it's moved from the scene with Miraschon. Also him talking about the cherries is shortened.

I honestly prefer the anime's version of the Marilyn Manson fight, it's more logical and smart instead of Jolyne just beating Mirashon up.

I did like how the Manhattan Transfer fight is made more clear as to what is happening, but I still have no idea why White Snake allowed Manhattan Transfer to be be depicted EXACTLY as how it works in the real world. It would have been a great advantage to basically misrepresent how the stand works within the dream, unless Jotaro already knew what the ability was and wouldn't be fooled otherwise. Not sure if that was ever addressed.
