This is a yummy stick to your ribs type of meal. You can even make it in casserole form. It would be even better with homemade gravy lol... But the package gravy was delicious ... Give it a try! ❤️️

Mashed Potatoes:
3 lbs Potatoes (6 medium) Peeled and Sliced
Water to Cover Potatoes About 4-5 cups
2 Teaspoons Salt Divided (1 for cooking 1 for seasoning)
1/4 Cup Butter
1/4 Cup Sour Cream
1/4 Cup Milk
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Pepper
Instructions
Place the peeled and sliced potatoes into the bottom of the instant pot.
Cover with water and add 1 teaspoon of salt.
Cook on manual pressure for 8 minutes.
When the timer goes off, turn the instant pot off and quick release the pressure from the pot.
Drain the potatoes and return to the instant pot.
Add the remaining salt, pepper, garlic powder, butter, milk and sour cream to the potatoes. Mash until smooth.
Chicken
Batter:
3 lb chicken tenders cut into bit sized pieces
3 eggs
1/4 c milk
1 Tbsp vegetable oil
1/4 c flour
2 c flour
Seasonings: (sorry I didn't measure I just added so adjust to taste)
salt (1 tsp)
thyme(2 tsp)
basil (2 tsp)
oregano (1/2 tbsp)
black pepper (1-2 tsp)
paprika (1-2 tsp)
garlic salt (1-2 tsp)
ginger (1-2 tsp)
garlic powder (1 tbsp)
onion powder (1 tbsp)
Mix chicken and seasonings together in a big bowl and set aside.
Add 2 cups of flour to a bowl and add in some seasonings. I didn't measure this part. I just shook some in.. Whisk together. (salt, pepper, smoked paprika, garlic salt)
In a second bowl, add eggs, 1/4 cup flour, 1/4 cup milk and 1 tablespoon oil. Whisk until smooth.
When the oil is hot enough. Dredge chicken in the egg mixture, then coat with flour mixture. Drop into hot grease. They will float when done. ( about 8 - 10 minutes) . Cook until golden.
