With regards to the "meat glue". Yes it does exists and yes that white thing in the video is probably fat or cartilage. "Meat glue" is an enzyme called transglutaminase and yes it can bind meat scraps together but it doesn't stay in your food after cooking. Enzymes are proteins and proteins denature (they get broken down) in high temperatures so cooking actually destroys it. Cooking though doesn't remove the binding of meat by transglutaminase so the fact that it has seperated in the video makes me skeptical. Again, once it's binded already, it won't break apart even by cooking.

True, you must look up the SDS sheets of the product online for the true ingredients because the labels of food and other products are not required to list all the ingredients. I have even seen SDS sheets change over time to hide ingredients due to trade secret.
