The wall element trick is used in a few lego Architecture sets as miniature stairs.

The use of the minifig legs for the Lions is because in real life, 2 "Lions dancers" would cooperate and create the movements of the lion on the poles. There's a person controlling the head and the second person is behind holding/lifting the first guy. This means that yes, LEGO is taking realistic factors into the set.

One of my favorite build techniques is in the Orchids set, where they used the Demogorgon's head from the Stranger Things set as a representation of a small orchid flower.

Plain, transparent minifigure heads have been used as lamps in the Modular buildings since at least 2007. And the paint rollers were used as lamp holders in the Detective's Office in 2015 as well.

I love the Orchid set, using hero factory pauldrons, bionicle eyes, frogs, gear pieces and my favourite technique, the fork pushed through the arm hole of a shield to get the smaller petals. Plus the re purposing of the DemiGorgon head. Easily one of my favourite sets purely for the part usage.

My favourite building technique Lego used _has_ to be for the rear bumper assembly for the Speed Champions Pagani Utopia, where Lego used four traditional car door pieces in a completely different way to capture the distinctive shaping of the Pagani's rear end.
