As a black American woman who has visited both England and Ireland and who couldn’t wait to try fish ‘n chips in both respective countries I can whole heartedly agree. Both countries are known for their fish ‘n chips and while both had extremely fresh fish they lacked in the flavor category. Next time I go I’ll take along with me Maryland’s famous Old Bay seasonings. We put that stuff on everything!

The USA is huge and there is delicious regional cuisine everywhere. You need to ask the locals for recommendations. In New England, you won’t find the heavily spiced cornmeal batter but you will find delicious fish and chips. IMO the perfect fish and chips has a light crunchy batter that allows the fish to shine.
