How to Prune a Mature Cherry Tree Open Center

I often see that with new cherry trees it's recommended to cut the central leader about knee high to create the open vase shape. Will the trunk than stay at knee-height forever, or will it keep growing to the chest/shoulder height level of the cherry tree in this video?

I have a very mature and very old bing Cherry tree in my yard in NW Montana. (I bought this home a couple years ago, that has the tree.) Since I’ve been living at the home I’ve watered the tree and pruned it a little bit, but not much. It’s grown exponentially the last 2 springs I’ve had it. Almost 5 ft in some areas. The branches are way beyond the reach of a 15 ft ladder. Is it safe to say. I can do a hard prune this spring?

That’s my question—I have a five year old cherry that went pretty much unpruned for its first few years. I’m wondering if I can reduce the strong central leader to make this ‘mature open center’ habit. Thanks!

Is it too late to prune a sour cherry tree with 0.5 to 1 inch (2-3 cm) leaves? No flowers yet. It's May in southern Alberta. Last week we had snow on the ground this week it's Summer. It happened too fast. Didn't have time to do it earlier.

I thought you were going to cut out the central upward branch in the centre ...

Why not prune the top foot-and-a-half of every top branch.? They won't be able to get the fruit off of it anyways and it will give energy to the lower branches to produce more fruit..
