Here's a suggestion, if you haven't done it before.
What if you had Steve attach several firework rockets to the Dragon Fountain, causing it to shoot up and kill the Dragon?

Ideas: Steve does a cheatsy thing and starts to swim through the ground

To reach an exposed end portal room spawned way up in the sky, Steve throws a blaze rod at an ice spike biome, flooding the world just enough to reach it.

Steve inverts the entire chunk the end portal is in with the debug stick.

Steve thwarts a jumping attack from a golem with a torch placed on the ground.
