Apricot chicken 🐔 #shorts

Ingredients

- 1 brown onion, sliced
- 8 apricots, halved
- 600g chicken thigh fillets, sliced into 1cm x 3cm strips
- 2 tbsp olive oil
- 50g toasted pistachios, smashed
- 1 tsp coriander powder
- 1 tsp ground cumin
- 2 tsp garlic powder
- Fresh ground pepper
- Salt to taste
- 1 can apricot nectar
- Small handful of curly parsley, chiffonade
- Couscous (or rice) to serve

Method

1. In a large fry pan over high heat, add your olive oil. Once the oil is hot, add the sliced onions and a pinch of salt. Sauté for 2-3 minutes or until they start to brown and soften.
2. Next, add your sliced chicken thighs stir well and continue to cook for 3-4 minutes.
3. Add the spices, garlic powder and season with salt and freshly ground black pepper.
4. Stir well and once it's completely incorporated, add the apricot nectar.
5. Bring that to a simmer and after 2-3 minutes add the apricots.
6. Cover and continue to cook for 5-6 minutes then check the seasoning, and if you're happy with it, stir through half of the pistachios and parsley.
7. Serve over a bit of couscous or steamed rice and sprinkle over the remaining pistachios and parsley.

I am from Basra, Iraq and we have a traditional sweet apricot curry. Takes time to get used to it but it's delicious!

I love apricots when cooked because they go tart. I used to cook the most delicious chicken and peach dish. Thanks for reminding me. That’s next weekends Sunday dinner!!!!

We have a dish that we like to call Chutney Chicken here in South Africa. Same measurements of mayo and apricot Chutney, mix together with brown onion soup powder, mix into chicken and into the oven. Its so beautiful

Oh yeah! My favorite feel good food... casseroles, one dish meals. All good. Apricots are so underated. So good and loaded with good things for you. And best of all, don't have to peel them. Thanks Andy, you are a delight to watch always.

I still make this for myself because I grew up on it. It’s only the simple version with the canned nectar and French onion soup mix but damn it’s satisfying

Whoa! I've only ever had this dish twice in my life, and the apricots were always the star. For the second time, I think our host used a dry, sweet white wine before the orange juice (I don't remember the name!). That wide grin at the end said it all - total satisfaction!

Order up, Chef! Singapore Fried Hokkien noodles with all the fillings, with chilli sambal and calamansi lime halves on the side, for BP please!
